I know that I enjoy the crust of any pie and typically for me, it is the best part. I never thought about taking just a pie crust and making them into cookies. What a great idea. I am sure they turn out light and crispy. Dusted with just the right amount of sweet yummy how can you resist?

I love this idea and don't know why I never thought of it myself. My mom use to make a pie like this when we were little.nshe took any left over pie crust and pressed it into discarded aluminum pie plates, did the butter,sugar and cinnamon thing and called them nothing pies! Of course she made her crust from scratch!
